FIELD OF GREENS LEADS LOCAL INITIATIVE OF GLOBAL TREND FOR “MEATLESS MONDAYS”
WEST PALM BEACH, Fla. (February 28, 2011) – A nationwide food revolution is occurring and the South Fla.-based Field of Greens, with locations in West Palm Beach, Palm Beach Gardens and Wellington, is leading the charge in the Sunshine State. Called Meatless Mondays, it’s a nationwide initiative to encourage people to reduce meat consumption by 15 percent in order to improve personal health and our environment.
Reducing meat consumption once a week can limit cancer risk, reduce heart disease risk and fight diabetes. It also is known to help cure obesity, help people live longer and improve their diet. Environmentally, it minimizes an individuals’ carbon footprint, minimizes water usage and helps reduce fossil fuel dependence. Meatless Mondays is a non-profit initiative in association with Johns Hopkins’ Bloomberg School of Public Health.
“My husband, a cardiologist and chairman of the Board at JFK Hospital learned about this initiative while researching for a speaking engagement,” said owner Debbie Lakow. “Just reducing meat consumption by one day a week can have a powerfully positive impact, on our bodies and the environment.”
Field of Greens, already known for its plentiful vegetarian and vegan options, is leading the local initiative, adding three delicious dishes to their already “green” Monday menu. Created by one of the store’s vegan managers, the new Monday dishes are:
- · Meatless Monday Quesadilla: a quesadilla filled with corn, black beans and cheese, topped with homemade mango salsa and guacamole, and tofu sour cream. $7.50
- · Stuffed Portobello Mushrooms: Roasted portabella mushroom caps stuffed with a tasty tomato, spinach and feta stuffing, served on a bed of baby greens with homemade Italian dressing. $7.50
- Not Your Daughter’s Veggie Burger: A veggie burger panini grilled on sundried-tomato focaccia bread, topped with sliced tomato, banana peppers, grilled onion and oil & vinegar dressing. $7.50
These options are in addition to the fast-casual eatery’s expansive make-your-own salad bar, vegan chili and other homemade vegetarian soups, wraps, sandwiches and more.
